About the stall
A mother and daughter baking French patisserie in a hawker centre.
Cat in the hat is a two-person bakery at Golden Mile Food Centre. The bakes are French: financiers, madeleines, canelés, scones, butter cakes and tarts, made in small batches behind a single hawker stall.
Everything is baked fresh each morning and set out in the glass case with a slate price card. Nothing is held back for the next day. When a tray is finished, it is finished, and the board changes with what is in season.
